winemaker's notes
Nose: Citrus, flinty, herbaceous
Palate: Steely acid backbone, a tight mineraly wine with a sweet middle palate.
Winemaking: Handpicked in early morning, cooled and crushed at night to prevent oxidisation. Once gently pressed, the juice was transferred to cold stainless tanks and allowed to settle for 3 days, racked and cold fermented for a further two weeks. Minimal finings and gently bottled to preserve aromas and fruit characters. A great Semillon vintage which will produce exceptional aging potential!
